Foods pulled from walk in cooler less than 4 hours ago. Observed foods on top bacon container in unit. Operator rearranged containers and placed foods on ice to quick chill. Foods not prepared or portioned today.

In fliptop unit, FLIPTOP UPPER - sliced cheddar cheese (51F - Cold Holding); sliced swiss cheese (52F); cream cheese (54F - Cold Holding); butter (58F - Cold Holding) LOWER - cooked eggs (47F - Cold Holding); cooked sausage (46F - Cold Holding); individual cream cheeses (51-52F). Per manager cooler restocked at 2:00pm. Items not prepared or portioned today. All items removed back to walk in cooler to rechill. Do not use unit until temperature can be maintained at 41F or below.
