Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Flip top cooler in sandwich line; cream cheese 45F ( cold holding ); butter (46F - Cold Holding). Foods pulled from walk in cooler less than 4 hours ago. Observed foods on top bacon container in unit. Operator rearranged containers and placed foods on ice to quick chill. Foods not prepared or portioned today.

In fliptop unit, FLIPTOP UPPER - sliced cheddar cheese (51F - Cold Holding); sliced swiss cheese (52F); cream cheese (54F - Cold Holding); butter (58F - Cold Holding) LOWER - cooked eggs (47F - Cold Holding); cooked sausage (46F - Cold Holding); individual cream cheeses (51-52F). Per manager cooler restocked at 2:00pm. Items not prepared or portioned today. All items removed back to walk in cooler to rechill. Do not use unit until temperature can be maintained at 41F or below.
No paper towels or mechanical hand drying device provided at handwash sink. At sink by drive through. Manager replaced.
Old labels stuck to food containers after cleaning. Old labels on containers in walk in cooler. Manager removed.
