Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Inside walk-in cooler: egg (45F - Cold Holding); sausage (45F - Cold Holding); sausage (45F - Cold Holding); milk (45F - Cold Holding); milk (45F - Cold Holding). Ambient air temperature inside the walk-in cooler is 43F. Manager provided temperature logs proving that all foods were at the proper temperature this morning. Manager opened the door to the connected walk-in freezer to help cool the product to 41F. Inspector checked thermometer for calibration and had manager verify temperatures of the products with her own thermometer during this inspection.
