Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Sausage patties (50F - Cold Holding); cream cheese (52F - Cold Holding) Operator says she uses Time as a Public Health Control for these items, put them out at 6AM, and planned to discard at 10AM. Items had no time marking or written procedure. I emailed operator Time as Public Health Control procedures, she filled out during inspection and time marked items.
