Handwash sink used for purposes other than handwashing. Observed coffee and ice in the handwashing sink on the cook line. Discussed the proper use of the hand washing sinks with the manager.
Proof of required state approved employee training not available for some employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. Observed expired training for some employees.
Employee beverage container on a food preparation table or over/next to clean equipment/utensils. Observed two employee drinks near the handwashing sink on the cook line. Manager voluntarily discarded drinks.
Equipment and utensils not properly air-dried - wet nesting. Observed wet stacked containers on the drying rack near the three compartment sink.
Ice buildup in reach-in freezer and/or walk-in freezer. Observed ice buildup up on the pipes and door frame of the walk in freezer.
In-use utensil stored in standing water less than 135 degrees Fahrenheit. Observed utensils in standing water temping at 81F. Manager removed and replaced utensil in a dry container.
