Per Manager, item transfer from another location and placed in unit 40 minutes prior to the inspection. Operator transfer milk to walk in freezer for quick chill.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. -Observed sausage hot held at 109°F in hot holding equipment. Per operator, sausage placed in unit less than 3 hours prior to the inspection. Operator reheat for immediate serving.
