No written procedures available for use of time as a public health control to hold time/temperature control for safety food. Observed raw hard shell eggs out at room temperature with no written plan, sent owner an email of the copy of procedures.
Commercially processed reduced oxygen packaged fish bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package. Observed Swai Filets, 6 individual thawed out in the packaging in the reach in cooler in the kitchen, owner voluntarily discarded. Stop sale.
