Observed raw chicken next to raw pork inside same container at front RIC. Operator removed and placed items correctly.

Quaternary ammonium sanitizer not at proper minimum strength for manual warewashing. Do not use equipment/utensils not properly sanitized. Observed Triple Sink (Quaternary 0 ppm). Operator added sanitizer solution to get 300 ppm.

Equipment in poor repair. Observed the dishwasher machine out of order. As per operator they used only the three compartment sink. The three compartments sink was setup.
