Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. At kitchen reach in cooler, fruit cups with melon (52F - Cooling)@11:05 since 10:00, 51F @11:40. At the current rate, product will not 41F within 4 hours. Advised operator of proper cooling parameters. Operator moved product to different cooler to fascilitate cooling.
No measuring device available for measuring utensil surface temperature when using hot water as sanitizer in a dishmachine. Operator provided hot water sanitizer test strips.
