Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In flip top at front counter, Cooked Steak (47F - Cold Holding); Cooked Chicken Strips (49F - Cold Holding); Tuna Salad (46F - Cold Holding), per operator, foods not prepped or portioned today. Foods held in walk in cooler, and moved to flip top cooler and held for approximately 3 hours. Foods were moved back to walk in cooler to quick chill.
Wet mop not stored in a manner to allow the mop to dry. Wet mop stored in empty mop bucket downwards. Operator placed mop to dry in mop bucket basket.
