Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. At front counter DISPLAY CASE - house baked bread with vegetables (73F - Hot Holding). Per manager prepared and displayed from 7:30am. Recommended using Time as Public Health Control for new baked bread/pizza items. Form provided, filled out, and time mark added to 11:30am.
Wiping cloth sanitizer solution exceeds the maximum concentration allowed. Sanitizer bucket reading greater than 200ppm chlorine. Employee remade to proper 100ppm.
Food-contact surface soiled with food debris, mold-like substance or slime. Red cutting board by triple sink grooved and heavily discolored with mold like buildup in grooves.
