What the inspector wrote — 5 findings
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. 1) In right fliptop upper cooler, sliced cheddar (40-46F - Cold Holding). Observed portions over stacked above chill line. Per manager, container portioned approximately 1 hour. Employee removed over stacked portion and placed in lower cooler to rechill. 2) In left fliptop upper cooler, sliced swiss cheese (48F - Cold Holding); sliced cheddar cheese (47F - Cold Holding). Observed cheeses held in shallow pan compared to other items. Per manager, portioned less than 4 hours directly from walk in cooler. Employee moved container to lower cooler to rechill and moved new cheeses to deep holding pan.
