Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed SLICED CHEDDAR (47F - Cold Holding) at reach in cooler at front counter as per manager less than one hour. Manager placed in freezer for rapid chill.
Exterior door has a gap at the threshold that opens to the outside. Observed gap at bottom of rear exit.
Wet wiping cloth not stored in sanitizing solution between uses. Observed wet wiping cloth at preperation area not stored in sanitizer.

Observed butter (80F - Cold Holding) located on top shelf above front line prep cooler, less than 4 hours, food container not time marked as per TPHC 4hr procedures. Manager placed butter into reach in cooler for rapid cooling and provided a new container of butter properly time marked.
Warewashing sanitizing solution exceeding the maximum concentration allowed. Observed and tested quaternary sanitizer at 600ppm at three compartment sink. Manager diluted sanitizer by adding more water, tested again at 400ppm.
