Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In reach in cooler by service window for 2-1.5 hours: diced tomatoes 52f, cheese 54f, ham 63f. Operator began removing items and moving them to other coolers to rapidly chill.
Cold holding equipment not maintained in good repair. Do not store time/temperature control for safety food in this unit until the unit is repaired. Both reach-in coolers in unit have gaskets in disrepair. Items in standing reach-in cooler are in cooling.
No conspicuously located ambient air temperature thermometer in holding unit. No ambient thermometers in reach-in coolers in unit.

Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Cooked beans at 101f for 15 minutes. Per operator, beans were set to low to keep from drying out,and then turned off for 15 minutes before being turned back on high. Instructed operator to make sure beans reach at least 165f for reheating.
