Stop Sale issued due to adulteration of food product. Green sauce stored outside of food truck for self-service. Upon observation, self-service spoon had fallen inside sauce and was removed by a customer.
In-use utensil not stored with handle above the top of time/temperature control for safety food and rim of the container. Scoop for ground beef has handle buried under food. Operator removed scoop during inspection.

Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Rice in crockpot at 125f for 30 minutes. Operator changed setting from "keep warm" to "high" to reheat rice.
Ice scoop handle in contact with ice. Operator removed ice scoop during inspection.
A return visit. The problems from the previous inspection had been dealt with.

Mobile food dispensing vehicle disposing liquid waste improperly. Mobile unit has installed improvised lift station style septic system to move waste water to approved commissary's grease trap. Operator began disassembling improvised lift station and connecting external waste water disposal unit to transport to commissary's waste water disposal area.
No chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths. Operator does not have chemical test for quaternary ammonia sanitizer.
Waste receptacle/floor mat/hood filter cleaned in a manner that allows the waste cleaning water to drain onto ground. Observed soapy waste water on ground next to unit. Per operator, trash cans were cleaned in area behind unit and waste water from this cleaning was dumped onto the ground.
Nothing was found. The inspector recorded no violations at all.
