Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. reach in freezer: beef tamal (69F - Cooling) at 12:22; cooling since 9:45 - 66F at 12:51 Observed in deep container wrapped in tinfoil. At current rate of cooling product will not reach 41F within 6 hours. Advised operator to cool in single layers in shallow containers.
