Ambient air thermometer in holding unit not accurate within plus or minus 3 degrees Fahrenheit. Ambient thermometer in walk in cooler was not working, stuck at 46°f.. Chef removed and replaced with new thermometer
Commercially processed reduced oxygen packaged fish bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package. Fish thawed out had the packaging cut but not removed from packaging. Chef removed fish from plastic bags.
