An employee rinsed off a knife and cutting board after preparing raw beef without using sanitizer. Educated operator on proper food contact surfaces cleaning. Operator set up the triple sink properly and rewashed the utensils.

Handwash sink not accessible for employee use at all times. Sanitizer bucket was in the sink. Operator removed.
No chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths. Operator is using quaternary tablets for sanitizing. Test strips present are for chlorine. Operator needs quaternary test strips to test concentration.

Mobile food dispensing vehicle service opening not kept closed except during food service. Openings on either end of food truck are open when not serving customers.
Outer openings not protected during operation and vermin and/or environmental cross contamination present. No screens or sliding windows or screen doors present on MFDV. Front and side windows lift open with no food protection. Rear door has no screen. No vermin present. No cross contamination or environmental contamination present at time of inspection.
