Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. sliced swiss cheese (47F - Cold Holding); raw chicken (44F - Cold Holding); cooked beef (48F - Cold Holding)in walk-in-cooler. Operator stated the door may not have been fully closed while employees were in and out of it. Operator opened inner freezer door in walk-in-cooler to chill foods. Retemped foods at end of inspection and dropped 1-2 degrees. Also, garlic sauce with fresh garlic and oil (46F - Cold Holding)in reach-in cooler across from POS. Operator stated employee had container out a little earlier. Operator stated sauce will stay in cooler to chill.

Dishmachine not washing/rinsing properly. Must wash, rinse and sanitize all dishware, equipment and utensils in three-compartment sink until dishmachine is functioning properly. Observed dish machine not functioning located under 3 compartment sink. Manager removed from building stating that machine has never worked.
