Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. chicha drink with cook pasta (60F - Cold Holding), operator stated the reach in cooler was unplugged. Less than 5 hours, operator placed them in the freezer to ensure temperature goes down to at least 41F. sliced deli ham (56F - Cold Holding); sliced tomatoes (55F - Cold Holding); raw steaks (49F - Cold Holding). Less than 2 hours operator moved them to the walk in cooler to bring g down the temperature to at least 41F
