Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed : beef chips hot holding in the hot well, 89°. These were then reheated to 177° in the microwave.
Time/temperature control for safety, commercially processed food reheating for hot holding not heated to a minimum temperature of 135 degrees Fahrenheit in all parts. Observed : in the hot well on the cook line, reheated internal temperature of precooked beef chips, 89°. This was placed in the microwave and heated and stirred until it was above 165°.(177°)
