Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed the dishwasher machine testing at 0ppm. Employee changed sanitizer out and primed machine, machine tested at 10ppm. Advised manager to contact the dishwasher machine company. Employee will wash dishes in the dishwasher and sanitize using the three compartment sink.
Employee cracked raw shell eggs and then handled ready-to-eat food and/or clean equipment or utensils without washing hands. Observed an employee crack raw shelled eggs and change gloves without washing hands in between. Manager discussed proper handwashing with employee. Employee washed hands and then changed gloves.

Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed grease build up on the walls next to the stove on the cook line.
