Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In the reach in cooler located in front of the fryer observed cheese (60F - Cold Holding); green tomato (67F - Cold Holding); cooked chicken (60F - Cold Holding); cheese (60F - Cold Holding), as per owner for less than 4 hours, operator placed all food items in the reach in cooler next to it for a rapid cool.
