Certified Food Manager or person in charge lacks knowledge of employee health policy and health requirements. During the inspection, Supervisors explained the policies in Spanish to the operator. inspector provided the forms to the operator during the inspection.
Employee did not report symptoms/diagnosis of a disease transmissible through food to the person in charge. All employees must follow the standard protocol before returning to work at that facility.

Manager took cooked food back to kitchen for reheating. Observed cooked beef (179 F - Reheating); cooked chicken (166 F - Reheating); cooked garbanzo (166 F - Reheating); cooked grilled chicken (178 F - Reheating).
Wiping cloth sanitizer solution exceeds the maximum concentration allowed. Observed Sanitizer Bucket (Chlorine 100+ppm). Manager replaced sanitizer inside bucket and corrected to Sanitizer Bucket (Chlorine 100ppm).
