As per employee for less than 10 minutes. Employee placed fried chicken inside oven to reheat. Also observed Black Beans and Rice (131F - Hot Holding) inside cooking machine next to three compartment sink at kitchen area. As per employee for less than 2 hours. Operator reheated during inspection Black Beans and Rice (202F - Reheating)
Vacuum breaker missing at hose bibb or on fitting/splitter added to hose bibb. Observed at hose bibb next to reach in freezers in front of stove at kitchen area. Operator put the vacuum breaker on hose bibb during inspection.
Food-contact surface soiled with food debris, mold-like substance or slime. Observed can opener blade soiled at preparation table at kitchen area. Operator removed, washed and sanitized during inspection.

Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed hot holding unit gaskets soiled next to hand wash sink o the right side of front counter.
Stored food not covered. Observed several container of frozen fruits stored uncovered inside reach in freezers at front counter. Operator covered them during inspection.
Time/temperature control for safety food thawed in an improper manner. Observed frozen yuca and corn casserole thawing at room temperature on top of preparation table in front of stove at kitchen area. Employee put them inside reach in cooler in front of stove at kitchen area.
