Manager put tamales back in oven to bring back to proper temperature Observed at steam table white rice (124F - Hot Holding); rice and beans (124F - Hot Holding); chicken (101F - Hot Holding) operator moved food around and increased equipment temperature; as per operator food has been there less than four hours.
