Observed cooked beef, cooked chicken (123F-124F - Hot Holding) in steam table across from grill. Operator stated meat was cooked this morning and placed in steam table, steam table may not have been hot enough yet when product placed in there. Operator reheated both meats to more than 165F and placed back in steam table.
In-use knife/knives stored in cracks between pieces of equipment. Observed knife stored under cutting board in prep area across from meat display case. Employee removed knife to properly store.
