Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Butter and commercial cooked gyro meat (57-58F - Cold Holding), stored in reach in cooler. Items were left out for few minutes on prep table prior then put back in as per person in charge. Ambient temperature of reach in cooler at 41F.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Rice (127-131F - Hot Holding), stored in rice warmer, place there for hot holding after initial cooking approximately 30 mins ago. Warmer was turned off. Employee turn unit back on and reheating rice
