Observed cook handle money for customer and then change gloves without also washing hands. Discussed with operator times a proper handwashing is required in addition to glove change, operator properly washed hands before continuing food service.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. By grill, fresh garlic in oil (98F - Hot Holding) for 100 minutes per operator. Discussed using time as a public health control and provided form.
Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked. In tall glass door reach-in cooler, no foods date labeled including cooked pork tamales stored between 1-3 days per operator. Spoke with operator regarding introducing a date labeling system.
