Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In the reach in cooler located at cook line observed coleslaw salad (52F - Cold Holding), as per chef for less than 4 hours,employee transferred food to inside the unit to rapidly cool.

Observed ROP fish thawing not removed from ROP package, chef stated that the fish was stored outside for less than 1 hour thawing under water then placed in the RIF to be prepared, chef removed fish from package on site.
