Employee began working with food, handling clean equipment or utensils, or touching unwrapped single-service items without first washing hands. Employee hanging out at the front of the truck received a food order placed on gloves then started cooking no Handwash before putting on gloves.
Employee switched from working with raw food to ready-to-eat food/clean utensils without washing hands. Employee placed raw beef on flat top no glove change or handwash then he continued touching clean utensil handles.

Warewashing sanitizing solution exceeding the maximum concentration allowed. Three compartment sink with chlorine tested over 200ppm.

Incorrect chemical test kit provided for measuring the concentration of the sanitizer solution used in the three-compartment sink and/or dishmachine. Establishment using chlorine but has quaternary ammonia test strips.
No dishwashing facilities of any kind provided. Establishment utilizing 2 compartments of the Three compartment sink due to one of the compartments being in disrepair.

Employee personal food not properly identified and segregated from food to be served to the public. Personal packages of ham over juices to be served to the public.
Equipment and utensils not rinsed between washing and sanitizing. Employee washed dishes in soapy water then dipped dishes in sanitizer solution no rinse in between due to the 3rd compartment being in disrepair.
Food stored on floor. 3 jugs of clean cooking oil on floor.
Mobile food dispensing vehicle license number not permanently affixed on the side of the unit in figures at least 2 inches high and in contrasting colors from the background of the vehicle.
No Heimlich maneuver/choking sign posted. Sign in folder but not posted.
Plumbing system in disrepair. Metal drain piece and pvc pipe in disrepair under sanitizing compartment on Three compartment sink.
Time/temperature control for safety food thawed in an improper manner. Raw beef thawing at room temperature, beef was placed in cooler.
Nothing was found. The inspector recorded no violations at all.
