Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked. Tuna salad and lentil soup made 8/22 not date marked at stainless reach in cooler. Operator date marked products.
Dishmachine not washing/rinsing properly. Must wash, rinse and sanitize all dishware, equipment and utensils in three-compartment sink until dishmachine is functioning properly. Per operator, steam not venting properly for high temp dish machine. Per operator, dish machine will not be in use until part arrives and is repaired. Operator is currently sanitizing via triple sink with quaternary sanitizer.
Wiping cloth quaternary ammonium compound sanitizing solution not at proper minimum strength. Sanitizer Bucket (Quaternary 50ppm) Operator corrected to 400ppm quaternary sanitizer. Advised operator to wet wiping directly under quaternary sanitizer hose prior to filling sanitizer bucket.

Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. green goddess dressing (sour cream) (47F - Cooling) at 11:03; cooling since 8:00 - 49F at 11:28 Observed in squirt bottle in upper portion of flip top cooler. At current rate of cooling product will not reach 41F within 4 hours. Operator placed on ice bath in shallow pan and placed in reach in cooler to quick chill.
