Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. In service area, cooked meat sauce 127F at 3:15pm (cooked cooling approximately 30 minutes) to 98F at 4:10pm. Based on times and temperatures, sauce will not reach 70F in 2 hrs. Manager began to separate sauce in to more shallow metal containers to aid in faster cooling.
