Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed chlorine sanitizer concentration 0 ppm. Sanitizer was adjusted to 100 ppm.
Food-contact surfaces not sanitized after cleaning, before use. Do not use equipment/utensils not properly sanitized. Observed bowls and plates inside the dishmachine and dishmachine had sanitizer concentration chlorine 0 ppm. Machine was adjusted and then, sanitizer concentration was 100 ppm.
Chemical test kit not used to ensure proper sanitization of equipment and utensils when using a chemical sanitizer. As evidence of chlorine sanitizer concentration 0 ppm.
