Standing water in bottom of reach-in-cooler. Standing water in bottom of wine jug cooler next to walk-in cooler. Operator placed towels in cooler to soak up water.

Cooler top closed to cool items. In walk in cooler, beef stock, scalloped potatoes, chicken 47F. Door constantly opened and closed during prep. Door kept closed to cool items.
