No sanitizer of any kind available for warewashing. Only use single-service items to serve food to customers until sanitizer is available for warewashing. Operator did not have any bleach or other sanitizer that can be used to sanitize countertops and equipment. Operator called to have someone bring.

Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed chorizo at 117 F and beef at 133 F, asked operator how long was on shelf said less than an hour, operator reheated and corrected on site.
Handwash sink used for purposes other than handwashing. Observed bags in the handwashing sink, operator removed.

Observed pans of food stored on rack over grill cactus (129F - Hot Holding); chorizo (127F - Hot Holding); really ce (129F - Hot Holding) pork 129hotholdong.operator stated only off grill for about an hour reheated to 165F and will hold on grill top to maintain heat at 135F or hotter. Advised to see about getting alternate method such as crock pots that were able to maintain foods at 135F or hotter.
Handwash sink used for purposes other than handwashing. Observed cooking utensils stored in handsink at inspection. Operator removed to dirty dish area.
Outer openings not protected during operation and vermin and/or environmental cross contamination present. Observed no screen in window, fly flew in then out during inspection did not see any flies land inside unit at inspection. Advised operator to place sliding screen in window.
