Cooked/heated time/temperature control for safety food not cooled from 135 degrees Fahrenheit to 70 degrees Fahrenheit within 2 hours. At the front counter cooked liver placed at 8:40am (120-125F at 9:40)(2nd temp 123F at 10:20), kebab placed at 8:40am (62F at 9:40am)(2nd temp 64F at 10:20). At current rate will not cool down within proper 70F within 2 hours. Operator placed in freezer for cooling.
Food-contact surfaces not sanitized after cleaning. In the kitchen triple sink sanitizer compartment not set up, employee only went through wash and rinse compartment. Operator set up sanitizer compartment at 75 ppm.
Raw animal food stored over/not properly separated from ready-to-eat food. In the walk in cooler raw eggs stored over cooked foods. Operator moved cooked foods.
Single-use gloves not changed as needed after changing tasks or when soiled. Employee dropped towel in trash and then pulled out of trash without washing hands or changing gloves. Employee then proceeded to handle clean equipment. Employee washed hands and changed gloves.
