Observed the following food temperatures greater than 41°F; cooked rice (61F - Cold Holding); cooked basa fillet (62F - Cold Holding); cooked chicken (73F - Cold Holding); chicken wings (69F - Cold Holding); cooked beef (66F - Cold Holding) All foods were stored on front counter at ambient temperature. Foods were stored behind a glass and labeled with common name. According to employee food remains in location during hours of operation and had only been out for about 2 hours prior to start of inspection. Advised that all foods need to be placed in reach in cooler and are to be maintained at proper temperature.

Observed the following food temperatures greater than 41°F; lamb and rice (69F - Cold Holding); fried Smelt (71F - Cold Holding); chicken wings (70F - Cold Holding); roasted pork (62F - Cold Holding) All were located on top of front counter intended for customers. Advised that all foods must be kept in cooler at 41°F or below. As per manager food had only been out for about an hour.
Required employee training provided by a third-party employee training program and operator unable to provide original certificate for employees trained. Observed all employees trained through Florida Restaurant and Lodging Association but original certificates. Operator provided copies.
