Manager stated item placed in cooler one hour prior to temperature being taken. Manager removed lid from pan and moved item to top of reach-in cooler to reduce temperature to 41F.

Owner stated items in cooler were at proper temperature one hour prior to temperature being taken. Owner moved items to top shelf of cooler to reduce temperature to 41F.
