Time/temperature control for safety, commercially processed food reheating for hot holding not heated to a minimum temperature of 135 degrees Fahrenheit in all parts. Checked temperature of Alfredo sauce 129°f /130°f placed on the steam table removed from the hot box. Recommend to check temperature in the hot box. Before placing on the steam table front service line. Employee added more water to the hot well. Spoke to Chef reviewed the PDA information for reheating of Alfredo sauce.
