Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed opened commercially processed Salsa on buffet line @50F, discussed the procedure and TPHC with Millicent. Buffet opened from 630-930 and salsa is discarded at end of breakfast. Salsa will be refrigerated prior to the next day to help maintain cold hold during the operation.
