Dishmachine not sanitizing properly. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed the hi temp dish wash machine only reached 173° on the digital read out. After the initial run, it did not go over 148°. ALSO, the 160° surface test strip did not change color.

No paper towels or mechanical hand drying device provided at handwash sink. Observed the kitchen hand wash sink lacked paper towels. These were added.
Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed the left end of the juice dispenser has an accumulation of dried splash up.
