Time/temperature control for safety food prepared from/mixed with ingredient(s) at ambient temperature not cooled to 41 degrees Fahrenheit within 4 hours. Found cut watermelon (47 - Cooling) after 4hours placed in freezer to quickly cool to 41F then place back in refrigerator to maintain at 41F or below.

Equipment in poor repair. Observed white upright side by side refrigerator at back prep with foods at 47F. Moved foods to another cooler. May not use to hold Temperature sensitive foods until able to maintain at 41F or below.
In-use tongs stored on equipment door handle between uses. Manager removed to dishwash area.
