Operator is not properly tracking/marking the number of days ready-to-eat, time/temperature control for safety food prepared onsite was held at refrigeration temperatures prior to freezing in order to properly date mark the food when it is thawed and held at refrigeration temperatures again. Observed multiple containers of food items prepared on site with no date marking in walk-in freezer.

Rodent activity present as evidenced by rodent droppings found. Observed 20+ rodent droppings in outside storage shed. Rodent droppings are on ground near chemical side of storage shed, away from any possible food contact surfaces. Person in charge began cleaning area during inspection.
Time/temperature control for safety food identified in the written procedure as a food held using time as a public health control has no time marking and the time removed from temperature control cannot be determined. Observed cooked crispy chicken with no time marker person in charge stated was held on time as a public health control. Per person in charge chicken was cooked 3 hours prior and added time marking.

Observed employee crack a non-pasteurized shell egg then handle ready to eat sliced cheeses and cut tomatoes. Inspector educated proper hand wash procedures after cracking eggs.

Observed employee on cook line crack shell eggs into container and immediately began whisking with clean utensil and placing on grill without washing hands or changing gloves. Operator coached employee on washing hands when handling raw shell eggs.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. At flip top reach in cooler by stove in kitchen, lettuce (50F - Cold Holding). Manager stated lettuce was brought out of walk in cooler at 6 am and flip top has been opened and closed all morning. Operator placed back in walk in cooler, retemp after 30 mins 43F.
Time/temperature control for safety food identified in the written procedure as a food held using time as a public health control has no time marking. Cooked chicken sitting at back of grill that is held on time per operator did not have time marking. Operator added time marking.
No chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths. Operator stated he could not find his chemical test strips.
