Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Pulled pork (116F - Hot Holding), chicken (116F-Hot Holding), and rib tips (118F-Hot Holding) in the hot holding unit next to the cook line in the kitchen, stored in unit less than four hours per operator. Operator turned unit to highest setting to reheat to 165°.
Wiping cloth solution exceeding the maximum concentration allowed stored in a location that could result in the cross contamination of food, equipment, utensils, linens, single-service, or single-use articles. Chlorine sanitizer bucket tested at over 200ppm. Operator remixed solution and tested at 100ppm.
