Per operator, food stored inside smoker for approximately 10 minutes. Operator put food inside oven to reheat to 165F for hot holding; food reheated to 178F.
Accumulation of black/green mold-like substance in the interior of the ice machine/bin. Observed accumulation of pink mold like substance inside ice machine, inside kitchen. Employee c,earned during inspection.
