Sewage/wastewater backing up through sinks. Observed waste grey water backing up in three compartment sink inside food trailer when water is being ran at hand wash sink. Operator has grey bucket on exterior ground under waste valve in open position with snake line to attempt to catch waste water due to waste tank on food trailer being clogged from previous day as per employee. Waste valve is dripping waste water into exterior bucket very slowly and bucket is already filled.
Stop Sale issued on time/temperature control for safety food due to temperature abuse. Operator has 1 pan of cooked chicken dated 11-2-25 and 1 pan of peas/carrots with same date stored in reach in cooler which were used before under TIME and place back in reach in cooler again for usage and not discarded as per employee and manager. Spam (47F - Cold Holding); cooked pork (48-50F - Cold Holding); raw shrimp (44F - Cold Holding); raw beef (45F - Cold Holding), stored in reach in cooler from overnight but unit door slightly open when going in and out. Employee closed. Ambient temperature at 51F and dropping.
