Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature: pan of raw chicken breasts over pan of raw hamburgers in walk-in cooler. Manager had employee fix.
Commercially processed reduced oxygen packaged fish bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package: fish recently removed from the walk-in freezer and not thawed yet. Manager had employee remove from packaging. No Stop Sale issued.

Employee touched bare body part and then engaged in food preparation, handled clean equipment or utensils, or touched unwrapped single-service items without washing hands: Cook was on phone and then wiped his face. He was getting ready to put on gloves without washing his hands when this inspector stopped him. The General Manager was there and I explained to her the situation and she had him was his hands.
No soap provided at handwash sink: Hand-wash sink on cook line does not have soap. General Manager replenished during the inspection.

Vacuum breaker missing at mop sink faucet or on fitting/splitter added to mop sink faucet: Mop sink faucet has a splitter on it with a clear hose going to a chemical dispenser and a red hose going to the sink. The red hose needs to have a back flow preventer on it.
A return visit. The problems from the previous inspection had been dealt with.

Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature: - raw chicken wings in bins on shelf in walk-in cooler over bin of ground beef. Chicken has been removed from its original packaging and ground beef is still in its original packaging. General Manager had an employee rearrange food for proper storage. Inspector gave Safe Storage handout to General Manager for posting on the walk-in cooler.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit: - pulled pork 55° F, hamburgers 64° F, fajita beef 59° F, raw chicken strips 50° F. All items are located in the low boy reach-in cooler under the grill. All items less than 2 hours.
