Parts are being ordered and awaiting Tallahassee approval as the bathrooms are managed by The State Park Service. There are signs directing guests to use portable bathrooms or the hilltop permanent bathrooms located across the parking lot.

Wiping cloth sanitizer solution exceeds the maximum concentration allowed. Observed: sanitizer in a bucket at 400+ ppm. Partial dump and refill with just water to correct.
Operator is doing a special process, conducting reduced oxygen packaging, cooking time/temperature control for safety food to a time and temperature combination lesser than those in the Food Code or operating a molluscan shellfish tank for human consumption without a HACCP plan approved by the Division of Hotels and Restaurants. Observed: a vacuum machine used for reduced oxygen packaging, for raw ground beef. Operator states they will seal but not vacuum, this process will work the same for them, and then freeze.
Employee beverage container on a food preparation table or over/next to clean equipment/utensils. Observed: 2employee drinks stored on the prep table. These were moved below.
Food stored on floor. Observed: bulk oil stored on the floor, next to the fryers.

Commercially processed reduced oxygen packaged fish bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package. Grouper Fish thawing in ROP Bag. Box says it should stay frozen. Person in charge cut bag open to thaw.
