Cooked/heated time/temperature control for safety food not cooled from 135 degrees Fahrenheit to 70 degrees Fahrenheit within 2 hours. Observed cooked peppers 129F cooling, per operator peppers have been cooling for 1 and 1/2 hours. Educated operator about cooling methods. Operator put peppers in metal pan on ice. Second test at 2 hour mark 65F cooling.
Accumulation of black/green mold-like substance in the interior of the ice machine/bin. This is a repeat violation from 1-16-25.Operator cleaned bin.

Vacuum breaker missing at hose bibb or on fitting/splitter added to hose bibb. A metal hose with a spigot has been added to the water valve under the handwashing sink on the cook line and is used for filling stock pots on the line. A backflow preventer is required on this fixture.

Handwash sink not accessible for employee use at all times. Handwashing sink at the bar was blocked by a blender and bank bags in front of the sink. Operator moved items away from the handwashing sink.

A metal hose with a spigot has been added to the water valve under the handwashing sink on the cook line and is used for filling stock pots on the line. The spigot is currently being stored over the handwashing sink faucet. Manager stated he will install a hook next to and away from the sink to hang the spigot.

Explained to operator to bring item to proper temperature. Operator acknowledged and in process of making appropriate steps. Item heated to 165F for hot holding.
