Operator stated the restaurant had three deliveries in the last three hours and door was open for an extended amount of time. Closed door and rechecked ambient temperature, which had dropped 20F in 15 minutes and was continuing to recover. pork (48F - Cold Holding); ground beef (51F - Cold Holding); steaks (51F - Cold Holding); shell eggs (65F - ambient temperature )

Time/temperature control for safety food thawed in an improper manner. Fish and pork in separate sinks, not submerged in water and no water running. Kitchen Manager moved all food to the walk-in cooler.
